Black Bean Brownies

Don't cut me short after just reading the title to this post. I promise, from the bottom of my heart, it doesn't taste like you think!! My husband can attest, he is the most suspicious eater (I probably made him that way because I continually try to hide things in his food! The man doesn't like any vegetable!) and he didn't suspect a thing! However, after I told him, he figured he would get a hint of black beans, or maybe a texture but, NOPE! It's a winner and I just dare you to try it out...They look good, they smell good, they are decently healthy, and eh, why not? Black Bean Brownies could be the rave of the future!
I topped the brownie with a vanilla, chocolate swirl semifreddo, I think P is getting used to having semifreddo in the freezer, I may have started something, or at least spoiled someone!

Black Bean Brownies
Recipe adapted from Meal Makover Moms

One 15 ½-ounce can black beans, drained and rinsed very well
3 large eggs
3 tablespoons coconut oil (or other mild flavored oil)
3/4 cup granulated sugar
1/2 cup cocoa powder
1 teaspoon vanilla extract
1 teaspoon instant coffee mixed in 2tbs of milk (optional)
1/2 teaspoon baking powder
Pinch salt
1/2 cup mini chocolate chips

1. Preheat the oven to 350°F. Spray an 8 X 8-inch baking pan with nonstick cooking spray and set aside.

2. Place the black beans in the bowl of a food processor; process until smooth and creamy. Add the eggs, oil, sugar, cocoa powder, vanilla extract, coffee, baking powder, and salt and process until smooth. Add the chocolate chips and pulse a few times until the chips are broken up a bit.
3. Pour the batter into the prepared baking dish.
4. Bake 30 to 35 minutes, or until the edges start to pull away from the sides and a toothpick inserted in the center comes out clean. Cool in the pan before slicing. *they taste even better after sitting in the fridge over night! :)

One thing that also excites me is, I was able to make these almost completely organic!! wooohoo

I bet there are a number of things that could be made scrumptious, like this, from mind is going...I guess you'll have to wait and see what comes of it! :)

Looks like Kaepo put his nose in the semifreddo!!

  1. They do sound good!! And as far as the new look of your site goes, I like it, but I sort of preferred the old look, but only because I love green :) But everything else about it is great! My carnitas turned out great recently, btw!

  2. I can actually attest to the great taste of these brownies as finally I was a recipient to one of these culinary delights (I live but a stone's throw from this girl and rarely taste any recipes) They are D'LISH...

  3. These sound good! I like the idea of coconut oil :)

You may enjoy these as well...
