Bacon that likes to Jam!

If you don't already know my husband loves bacon. Its right up there with Ice Cream on his favorites list. Fortunately, (i guess only for me) bacon isn't in our fridge very often. It's either because I rarely buy it, or because I gave in and my husband devoured it as quickly as possible. I also insist we buy the nitrate free kind which can get a little expensive! Then, I found a recipe I just had to make...since I was unsure of how it would turn out, I bought the cheaper kind (i know shame on me) and to top that off, I bought turkey bacon! He would die if he knew that...and I only substituted it because in the recipe its cooked down and mashed up so he never knew the difference! okay okay, on to WHAT i made..
                                                                   
                                                Bacon Jam!

Yes, I said it, Bacon Jam! or as I kept saying in my head while making it...my bacon is jamming!! I found this recipe not to long ago and as soon as I saw it, into my favorites list it went...different is always good, and since it made from one of my husbands favorite things, I knew it would be a hit!


Ingredients:

1 pound smoked bacon - or try turkey bacon!
4 cloves garlic, chopped
1 medium brown onion dliced
3 tablespoons brown sugar
Tabasco sauce (according to taste)
1 cup coffee
1/4 cup apple cider vinegar
1/4 cup maple syrup (I used agave since I had it on hand!)
Black pepper to taste
extra water

Directions:

1. In a non stick pan, fry the bacon in batches until lightly browned and beginning to crisp. Using a pair of scissors cut into 1 inch pieces.
2. Fry the onion and garlic in the rendered bacon fat on medium heat until translucent.

3. Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water. Simmer for 2 hours adding 1/4 of a cup of water every 25-30 minutes or so and stirring.

4. When ready, cool for about 15-20 minutes and then place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the “jam” or of course you could keep whizzing and make it a smoother and more paste like.

Then the wheals in my head started turning...they do that sometimes. What is P going to DO with this bacon jam (besides drool over it of course)...that's when I decided to make Bacon Jam Rolls! Similar to their brother (Cinnamon Rolls) but with a little less sugar and a lot more bacon. I used the same dough recipe as the No-Knead Cinnamon Roll recipe I made not to long ago. Instead of the filling I spread the bacon jam and rolled it up.

Results= well, in my husbands eyes, they were great. Try them for yourself...if you like bacon as much as P does, im sure you'll think the same!

  1. You are sooooo creative, and I semi believe you, however, I must try them for myself so I can attest to this culinary marvel... so I'll be anxiously awaiting my portion.... until then...
