Biscuits and Spring Flowers!

Friday was a bit nutty for me, a decision was made on Thursday at 4pm that I was going to be driving to Dallas the next day for an interview. Thankfully my mom volunteered to go with me! I knew it would make for a long day but really the trip was delightful, the interview went well, and we made it home by 9pm! My sweet husband greeted me at the door and on my kitchen island was a bouquet of spring flowers!! He figured I would be a tired woman and it would cheer me up when I got home...Flowers always cheer me up!
I had planned to make biscuits the next morning and those spring flowers made a perfect accompaniment not only to our breakfast but also the photo shoot!

My goal is to make Pillsbury flaky biscuits...I'm afraid I didn't acheave that goal this time around. Although they were quite tasty and darn good for a homemade biscuit. I substituted coconut oil for most of the butter and that is probably why I didn't end up with flakes...I guess healthy biscuits cant be flaky...darn the bad luck! Ill try harder next time around.

Better for you "Flakeless" Biscuits

Ingredients:

2 c. all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
4 Tbsp coconut oil
2 Tbsp butter (I used the Smart Balance stick kind)
3/4 c. milk
Directions:
Preheat oven to 450 degrees
In large bowl, sift or whisk together flour, powder and salt.
Cut the butter, very cold, and CO into dry ingredients until butter/CO pieces are about the size of a pea.
Add the milk and mix until just combined (texture should be sticky, moist and lumpy)
Roll the dough out on surface prepared with powdered sugar (rather than flour) into an aproximate 1 inch thickness (the more generous you are with the thickness, the bigger your biscuits will be).
Cut with lightly floured biscuit cutter and place on prepared baking sheet.
Place in oven and bake for about 10-12 minutes or longer until tops are nicely browned.
Serve immediately

Kaepo decided to snack on the flowers during my photo shoot...I guess its better than him snacking on our biscuits!
